Easy Snack recipe: Schezwan Paneer Pizza

Pizzas are loved by all, especially ones that have cheese oozing out of them and are generously topped. Pizza toppings are varied and one can pick any combination of flavours, ingredients and cooking styles to create their own personalized pizzas.

Schezwan Paneer pizza topping is one such unique topping that is widely sought in India. The Chinese origin Schezwan sauce, has the perfect blend of hot and sweet flavours that excite Indian taste buds. 

Most people dread making a Schezwan sauce as it is assumed to involve a tiring process. But that is very untrue! 

The recipe below is not only for a pizza topping but also for a quick and easy Schezwan sauce recipe which you can make in a jiffy and use to create other Schezwan delicacies. 

I usually make this topping for my son, who loves paneer. The delight in seeing him pick out juicy chunks of paneer and pop them in his mouth is priceless!

Easy Schezwan Paneer Pizza Recipe

  • 250grams fresh Paneer
  • Salt as per taste
  • Red – Orange food colour (optional)

 

For quick Schezwan sauce

  • 1/4th cup peeled garlic cloves
  • 3 tablespoon oil
  • 1/4th cup tomato ketchup
  • 1 tablespoon red chilli powder
  • 3 tablespoon vinegar
  • 2 tablespoons water
  • 1 teaspoon sugar
  • Salt as per taste

 

To assemble the pizza

  • 6 readymade pizza base, approx 6 to 7 inches
  • Butter, softened
  • Tomato ketchup
  • Mozarella or Processed Cheese
  • Assorted sautéed vegetables of choice (corn, capsicum, mushrooms, broccoli, bell-peppers)
  • Schezwan Paneer cubes
  • Pizza seasoning

 

Method

Step 1: Cut paneer into bite size cubes. Toss the paneer cubes with salt and food colour, keep aside while you prepare the Schezwan sauce.

 

 

Step 2: To make the Schezwan sauce, first mince the garlic.

 

 

Step 3: Heat oil in a non-stick pan / kadhai, add the garlic and sauté till they are light brown and crisp. 

 

 

Step 4: Add the tomato ketchup and mix well. Cook on simmer for 2 minutes.

Step 5: In a small bowl, mix red chilli powder, vinegar and salt. Add this paste to the pan. Cook on simmer for 2 minutes.

 

 

Step 6: Season with salt (keep in mind the paneer cubes also have salt in them) and sugar. Add the water and continue to cook on simmer till thick sauce consistency is achieved.

 

 

Step 7: Lastly, toss in the paneer cubes. Mix gently and switch off the flame. Avoid cooking the paneer with the sauce as it will soften and start crumbling. 

 

 

Step 8: To assemble the pizza, spread butter on the pizza base followed by tomato ketchup.

 

 

Step 9: Generously, grate cheese over the pizza.

Step 10: Top with Schezwan paneer cubes and assorted vegetables. Sprinkle pizza seasoning. If desired, you could grate some cheese again.

 

 

Step 11: Place the pizza in a hot oven and let it toast for 10 – 15 minutes @ 200 degrees C. If you like a soft crust pizza with melted cheese, then turn on only the top heating element of the oven. For a hard crust, you could turn on only the bottom heating element. 

Step 12: Once desired pizza crust is achieved, remove from oven and cool for a minute before cutting and serving.
