Recipe for the volatile taste buds of an expecting mum – Sesame Jaggery Bites

Pregnancy is a great phase in every woman’s life; you are pampered by everyone, you can sleep unlimited and most important, you can literally “hog” without worrying about the increasing weight. While eating “dil khol ke” should be the mantra during pregnancy, ironically most women start to dislike food, primarily the ones which were their favourite before being pregnant. This is due to the nausea one experiences during the early stages of pregnancy, it is given and nothing much can be done about it except being aware of and wisely stocking on foods that might help you feel better and overcome nausea. 

One such yummy and saviour food is the Sesame Jaggery Bites.  

Sesame Jaggery bites have high amount of jaggery which helps sooth the mind and feel better. Besides containing, Sesame seeds or Til seeds that are a super source of iron, which every mom-to-be needs to build on daily. Both these ingredients are highly nutritious and supply good quantity of iron and protein. The bites are flavoured with cardamom powder whose aroma works psychologically and helps feel better. Snacking on these bites, when one feels nauseous or simply when hunger strikes, is a good idea over other unhealthy snack options. 
The recipe is fairly simple and takes a quick calling for few ingredients. In the first try itself, you will get hooked to these crunchy golden bites. 
Eating fresh is something one should follow strictly during pregnancy, it is advisable to make a new batch of bites every week as opposed to making a huge batch that lasts for days. In case you are bored of the same snack, then try replacing sesame with other healthy ingredients like roasted almonds, roasted peanuts, roasted pecans, etc.

Sesame Jaggery Bites Recipe

Ingredients

  • 1 cup Sesame seeds / White Til
  • ¾ cup grated Jaggery / Gur
  • 1 ½ tablespoon Ghee + some for greasing
  • ½ teaspoon Cardamom / Elaichi powder
  • A pinch of salt

 

Method

Step 1: Grease a baking tray with ghee. Ensure all corners and sides are properly greased. Alternatively, you can grease the back of a steel thali if baking tray is not handy. Keep greased utensils aside.

 

 

Step 2: Take a non-stick pan and dry roast the sesame seeds in it, over a low flame, till they turn light brown and release an aroma. Remove seeds in a dry bowl and keep aside.

 

 

Step 3: In the same pan, heat ghee. Once it is hot, sprinkle the cardamom powder and salt. Mix well.

Step 4: Add the jaggery in the pan and let it melt over a low flame. Refer to picture below for stages of melted jaggery. 

 

 

 

Step 5: Keep a bowl of water handy and once the jaggery starts to bubble (as in the picture below) take some in a spoon and drop in the bowl of water, it should harden immediately. This indicates the desired stage of jaggery is achieved. 

 

 

Step 6: Immediately add the sesame seeds to the jaggery and mix well. Turn off the flame while doing this. Refer image below.

 

 

Step 7: Pour the mixture in the greased utensil and spread it with the back of a greased spoon or a greased rolling pin. Spread enough to achieve a thickness of 1/4th inch. You need to be really quick at this step.

 

 

Step 8: Let the mixture set till it hardens. It will take about 30minutes. Check by pressing your finger against it, should be as hard as ice.

Step 9: Once set, hit lightly with a rolling pin to create cracks. Break into sesame jaggery bites and store in an airtight container immediately.

 

Note: Given the high room temperatures these days, the bites will get soft soon, it is not advisable to store them for too long.
