Mushroom Pepper Sandwich Recipe

Sandwiches are my favorite pick for a quick lunch or a tiffin option when in hurry. Sometimes, I use my grill pan or even sandwich maker to get a deeper texture and crunch. However after being a sandwich fan myself, I have realized what plays the most important part in a sandwich is its filling and trust me we can do wonders in that space between the two slices.:-) 

Being a mom myself, I am always on a continuous lookout for recipes which would suit my 5-year-old son’s taste without compromising on the nutrition. 

This sandwich, besides its creamy and rich taste, is full of much needed carbohydrates, protein and vitamins for growing kids. I would, anytime, prefer to pack this for my son’s tiffin over a plain cheese sandwich. The other advantage is that the presence of garlic in it helps in increasing immunity and can be helpful especially during monsoons when kids are exposed to weather changes. Addition of cream cheese and cheese is to give kids what they love most and that’s how mom and kids both can  have a win-win recipe.

 

So, let’s get started:

Preparation time: 5 mins

Cooking Time: 10 mins

Serves:

Ingredients 

  • Mushroom: 4-5 sliced
  • Bell peppers (Red/Green and Yellow): 1 cup cut in strips
  • Garlic: 4-5 cloves chopped
  • Red chilli flakes: ¼ tsp
  • Oregano: ¼ tsp
  • Dried Basil: ¼ tsp
  • Salt: to taste
  • Tomato ketchup : 1 tbsp
  • Cream cheese: 1 tsp
  • Cheese cube: ½ grated
  • Oil: 1 tsp
  • Bread slices: 4

 

How to do it :

Heat oil and sauté garlic, add mushrooms after a minute and sauté them for good 2-3 minutes.

Now add salt and bell peppers and cook till they all are mixed and cooked well. This would take around 2-3 mins.

At this stage, add all seasonings like red pepper, oregano, basil, ketchup and cream cheese. 

 

 

Give this a good mix, add grated cheese and then let it cool.

 

 

Now spread this mixture on one of the slices and cover it with the other one.

Now grill it in a pan or a sandwich maker and enjoy it with your favorite dip/chutney.
