Gluten Free Pizza Recipe

I am going to keep this post-super short since I am in the middle of packing off to go to my folks, keeping T constructively occupied, especially since he’s on his Diwali break and completing my design assignments. So here’s our all-time favourite pizza now in a gluten fee option. It’s easy to make fresh and super healthy.

Ingredients for the crust:

1. 1 Small cauliflower, shredded

2. 1/3 Cup Parmesan cheese, grated

3. 2 Pods of garlic, crushed

4. Basil, finely chopped

5. Salt to taste

6. 1 egg

Ingredients for the topping:

1. Homemade pizza sauce (tomato puree with herbs and mild seasoning)

2. Yellow Zucchini or choice of vegetables, finely chopped

3. Mozzarella cheese

1. Either manually shred the cauliflower or in the food processor

2. Place the cauliflower in a strainer and give it a good wash, let a little water remain

3. Transfer to a glass bowl and pop it into the microwave for about 5-7 mins until tender (keep checking, careful not to burn)

4. Once cool, place the shredded cauliflower in a cheese cloth or a thin cloth and squeeze the excess water out

5. What you will now have is what’s known as ‘cauliflower rice’

6. Transfer the Cauliflower rice to a glass bowl and add the egg, garlic, cheese, chopped herb and seasoning

7. Incorporate it evenly until it’s even

8. Place a little amount of mixture on a baking parchment, oil the parchment a little first

9. Press and shape into a pizza crust

10. Bake in a preheated oven only until slightly browned, it should take approximately 15 minutes

11. Pull it out and once cooled, slather on some pizza sauce and toppings

12. Pop it in again and bake for about 8-10 minutes or until it looks cooked

13. This pizza is perfectly adult friendly too. Top off the ‘fresh out of the oven’ pizza with some rocket leaves and a drizzle of vinaigrette. Excellent veggie pizza for the toddler & a guilt free gorging option for the parents. 🙂
