I bet all us mums are looking for ways to serve up an extra helping of veggies to our babies, and I am TOTALLY guilty of sneaking in all sorts in all of T’s meals.
Recently, I’ve been experimenting with egg yolk in different formats (which I will share in my following posts) and this time I felt like I had hit GOLD with the veggies for breakfast deal!
I call this breakfast special ‘The Veggie Bomber’ for obvious reasons. It’s delicious and explosive in taste! So delicious that I couldn’t help but steal bits of it from my sons breakfast. 🙂
I used spinach and shallots for this recipe, one could use whatever veg they please.
Here’s what you need:
1 Egg yolk
1/2 Cup of chopped Spinach (make the ratio of the veg to the egg yolk/egg way larger, use egg to just bind the mix)
2 Finely chopped Shallots
Grated Cheddar cheese
3 Tbsp of Milk
Pinch of Mustard powder
Pinch of Garlic powder
Salt & Pepper to taste
Mix it all up, cook as you would an omelette & serve warm.
