Honey Cake is one of my fav cake since my childhood. Once after migrating to the other country, I totally missed my childhood fav cake. I tried this yummy cake and it came pretty good & delicious!
The process seems little huge, but it's so easy. To make it healthy. I used whole wheat flour instead of all purpose flour.
eggless cake base :
* Curd -¾ cup
* Sugar -1 cup
* Oil- ¾ cup
* vanilla extract-1 tsp
* Wheat flour - 2 cup
* Basking soda - ¼ tsp
* baking powder- 1 tsp
* Milk - ½ cup - ¾ cup
honey sugar syrup:
* 2 tbsp sugar
* ¼ cup water
* ¼ cup honey
Jam Toppings :
* ½ cup strawberry jam
* 1 tbsp honey.
🎂 Take a wide bowl and mix curd, sugar, vanilla extract and oil. Mix well. Keep aside. Whisk for 2-3 mil until all ingredients mix well.
🎂 Now in the same bowl, sieve flour, baking powder, and baking soda. Mix with cut and fold method without lumps.
🎂 now slowly add milk as required, don't over mix. The cake might turn rubbery. The batter should be in flowing consistency.
🎂 take a baking tray and grease the tray oil/ butter. Place a parchment paper at the bottom to avoid burning. Transfer the batter to the tray. Pat twice to avoid air in the batter.
🎂 place the tray in the PREHEATED OVEN at 360F /180C for 40 min.
🎂 remove from the tray and check with fork. Let it cool. Poke all over the cake to fill the honey syrup.
* Take a pan and add 2 tbsp sugar in ¼ cup water. boil the sugar syrup for 2 minutes. Till the sugar dissolves and bubbles appear. Now add ¼ cup honey when sugar is warm and mix well. Switch off.
* Carefully pour the sugar honey syrup over the cake. Keep aside.
Jam Spread :
* Now prepare jam mixture by taking ½ cup raspberry or any jam of your wish and 1 tbsp honey in a pan. mix well. Once the jam turns liquidy switch off the flame. Don't over cook the jam. It might turn hard.
* now spread the jam mixture evenly over the cake. sprinkle 2 tbsp of desiccated coconut over cake.
The Bakery Style ’ Honey Coconut Cake ’ is ready!
Tip : while the cake is baking you can prepare the syrup and jam spread. You can add more coconut as per your wish. Finally serve with the fruit toppings or cream. It's super soft and tasty than the normal cakes.
