✅ Boil 6 to 7 medium sized potatoes, boil until tender. ✅Once the potatoes are tender, drain the water and peel them immediately. Cut in two halves coat them with little salt and turmeric. ✅ Shallow fry the coated potatoes in a mustard oil. ✅ Keep the shallow fried potatoes aside now make a paste of spices, take cumin powder, coriander powder, amchur, black salt, ginger paste, and 25 g water, and mix it and keep at the ready. ✅Heat mustard oil in a pan. Temper it with dried red chillies, bay leaves, cloves, cardamom, cinnamon, cumin seeds, and hing.Allow the hing to fry for about 10 seconds before adding turmeric powder and kashmiri red chilli powder. Fry for 20 seconds and then add the paste you prepared earlier. ✅stir in the spice paste. Cook until the smell of raw spices is gone, you can add little curd here ✅ Now add shallow fried potatoes stir them in the curry, add little hot water.check the salt. ✅ crumble Kasuri methi add to the pan covet it allow the potatoes to simmer in the curry. Stir regularly. ✅once the gravy is reduced add little ghee and Garam masala and garnish it with coriander leaves .
