My memories of Beetroot from childhood is only that this veggies is part of salad's and I have seen it grated or thinly sliced few pieces on top of aloo tikkis or chats.. or even decorations in salad platter at functions.. so this was never part of my regular food in childhood and for that matter I never this much in my inlaws kitchen as well...
I am aware how healthy this veggie is knowing this is full of iron, magnesium and even natural blood purifier this little brown pink thing never saw my kitchen till 2-3 months back.
Every weekend morning I spend some time on internet to find some new breakfast option as we are bored of eating regular Poha, upma, vermicelli, idlis and stuff... So I saw good options which can be done with Beetroot and I asked my family if they want to try this.. And they were fine with giving it a try..; So that when first time this cute thing saw my kitchen and I tried my hands with Beetroot cutlets.... And Voila my kiddo and hubby loved it.. tummy full kids happy mom ..
On demand I am sharing the recipe here... 3 beetroot - boiled and; grated
4-5 potatoes - boiled and mashed
3-4 bread slices - crumbled, u can less if cutlets are binding well
carrots and beans - finely chopped and boiled (optional)
2-3 garlic cloves - grated or finely chopped
salt to taste
corinader leaves chopped
black salt for flavour
red chilli powder Mash and mix everything properly and see you can bind the dough in cutlets.. taste for the salt and adjust accordingly.. make your desired shape cutlets and shallow fry in non stick pan.. serve hot and enjoy with tomato ketchup...
