Ingredients :
1 ripe banana
1 egg yolk
1/4 teaspoon black pepper powder (optional)
Oil for pan frying the omelette
1. Mash the banana with a fork if it is ripe enough. Mine was still a little firm, so I pulsed it in a blender.
2. In a mixing bowl whisk the banana with the egg yolk till well combined.
3. Season with black pepper powder
4. Heat a pan and drizzle a little oil on it. Pour half the batter on the pan
5. Cover and cook on a low to medium flame for 1-2 minutes.
6. Flip the omelette carefully and cook the other side as well.
7. Serve with maple syrup or honey
