BOONDI RAITA
RECIPE
INGREDIENTS

1 Cup Shop Bought Boondi

3 Cups Water - room temperature to soak boondi
2 Cups Turkish Yogurt - or any strained yogurt

1 Cup Boiled Potatoes - cut into small pieces

1 Cup Boiled Chickpeas

1 Onion - Sliced

1/4 Cup Cold water - from fridge

1 Handful of Coriander leaves - chopped

1 tablespoon Cumin Seeds

1 teaspoon Mustard Seeds

1 tablespoon Mango Powder/Amchoor

Salt to taste

1/2 teaspoon Chilli Powder
TO GARNISH

Pinch of Chilli powder/chilli flakes

Pinch of Chaat Masala

Pinch of Cumin

Pinch of Chopped Coriander Leaves
INGREDIENTS

1. In a bowl place the boondi, add in water and leave to soak for 15-20 minutes or till boondi is soft

2. Drain in a colander

3. Whisk the yogurt

4. Add cold water, cumin, mustard seeds, chilli powder, mango powder, onions, coriander leaves & salt and mix well

5. Add the boondi in the yogurt & mix

6.Next add the potatoes and chickpeas and mix with light hands

7. Leave in fridge to become cold

8. When ready to serve, remove from fridge and then top with all the garnish items

9. Serve immediately.
