Broccoli 🥦 and spinach soup Broccoli is a vegetable that no matter what time of year, always seems to be around many parts of country too.. Perhaps because broccoli isn’t a fleeting ingredient, it’s never been at the top of my shopping list.. I though like roasted broccoli in a butter that’s it. But I have to think for a new healthy lunch option using dark green vegetables for my son. I made a batch of vegan broccoli spinach soup topped with roasted florets and nuts for him.. Unlike his parents he loves tomato, spinach, pumpkin and bottle gourd soup 🍲.. yesterday I thought of using both the broccoli florets and stems which truly maximizing its potential.. It’s a truly healthy vegan soup which anyone can fall for… Ingredients 🔹Butter or olive oil
🔹1 medium onion, finely chopped
🔹2 large garlic cloves, peeled and sliced
🔹kosher salt per taste
🔹1 teaspoon black pepper
🔹1 cup water
🔹2 cups vegetable stock
🔹1 medium size broccoli—stems peeled and sliced, florets cut into 1/2-inch pieces
🔹1 cup baby spinach
🔹Some nuts or cream for serving Method
Heat a pan and put some butter now add spinach broccoli garlic and sauté until broccoli and spinach becomes softer.
Let them cool and grind well
Add some butter again in pan and pour the mixture
Start adding vegetable stocks and mixing
Add salt and if required add water so give it a nice soupy texture..
