Ingredients of Fruit Cupcakes
100 gms butter100 gms castor sugar1 sweet lime2 eggs100 gm flour1 tsp baking powderFor the Cupcake Filling:2 Tbsp sugar syrup4 Tbsp chopped prepared fruit1 Tbsp candied gingerFor the Cupcake Topping :125 ml whipped creamSprigs of mint
How to Make Fruit Cupcakes
Cream butter, sugar and rind together.
Gradually pour in beaten eggs.
Fold in flour and baking powder.
Spoon into oiled muffin moulds/paper cases.
Bake at 180 degrees centigrade for 10-15 minutes. Cool.
Scoop out the center from the cupcakes.
Combine filling ingredients and place a 1 tsp in each of the cake hollows.
Top with whipped cream and mint sprigs.
