Roasted Poha Namkeen!!
A very yummy snack which can be made at home with some effort.. useful for night time cravings and is good for kids too..is very low on oil and very high on nutrition!!
Ingredients
5 cups poha or beaten rice
1/2 cup peanuts
1/4 cup almonds, 1/4 cup cashews cut into halves, 1/4 cup raisins, 1/4 cup melon seeds
7-8 leaves of kadi patta
2-3 green chillies slit from between and seeds taken out or dry red chilli
Salt and red chilli powder to taste
1 tbsp sabut zeera
2 tsp turmeric powder
1 tbsp sugar
1-2 tbsp aamchoor powder
3-4 tsp oil
Method
1. Take a heavy bottom pan and heat it. When hot add poha and dry roast it on low flame while stirring occasionally. Take care that it doesn't burn. This will take 10-12 minutes and little patience. We want it crisp. If you want add 1 tsp oil when poha is half done and roast.
2. Take out this poha in a plate and keep aside.
3. In the same hot kadai, add 3 tsp oil. Roast peanuts first till they are crisp. Then add almonds and cashews and roast. Also add melon seeds and roast. When these are done add raisins too. You can also add dry coconut pieces if you like.
4. Now add curry leaves and green chillies and mix everything well. Add turmeric powder, salt, red chilli powder, sugar and zeera too. Give a good mix.
5. Now add the poha we have kept aside and mix everything well. The poha should attain the yellow color. Mix with light hands.
6. Take the kadai off the flame. Let it cool for 5 minutes and then add aamchoor powder and mix.
You can make a good quantity and store it in an air tight container for many days. It can be given to kids in their snack time.
I am giving the picture of roasted Poha so that you can see how much roasting has to be done.
