1tsp each of turmeric, garam masala, chilli powder, jeera powder & dhaniya powder.
salt to taste.
1tsp cumin seeds.
Chilli flakes and mixed herbs for seasoning.
1tbsp oil.
1 tsp ginger garlic paste.
4 slices multigrain or whole wheat or brown bread.
2 tbsp grated cheese. Heat the oil in a pan. Then add the cumin seeds. As it splutters add the ginger garlic paste. When you get a nice aroma add the onions and sauté till translucent. Add in the tomatoes and cook till they become mushy and you see oil on the sides of the pan. You can add the spice powders except chilli powder when the tomato is cooking. Then add the mushrooms and mix everything well. Let the mushrooms cook in the spice mix. Add in the salt and then the chilli powder. You will see water coming out and finally drying up. Add the mixed herbs and chilli flakes. You can change the proportion of the spices as per your preference. The mushroom masala is ready. Transfer it to a bowl and keep aside. Scrambled eggs:
1 tsp oil
1 cup frozen peas
Pinch of turmeric
2 eggs
3 tbsp milk
Salt for taste
pinch of pepper
1tsp mustard seeds, 1 tsp cumin In a pan, heat the oil. Add the mustard and cumin seeds. As it splutters add the frozen peas and mix well. Once it is mixed break two eggs into the pan. Stir nicely till you see crumbs forming. Add the milk, salt and pepper. Now keep mixing till you get the texture seen in the pic. When done turn off the stove. Now take a slice of bread. Take a big spoonful of the mushroom masala and spread evenly on the bread. Add some grated cheese on top. On another slice add some of the mushroom curry and scrambled eggs together. Add some grated cheese on top.
Grill the bread in a microwave. I used the micro grill option for 1 min 30 secs. The bread will become crispy and the cheese will melt quite like a pizza.
Place the 2 slices on the plate , serve the remaining scrambled eggs. You can add some ketchup for a tangy punch. Bite into he crunchy toast and enjoy your moments in food heaven :) Enjoy!
