#imbecca #watermelonrindhalwa #zerowaste One thing I learnt (Actually I learnt many things) from this Covid 19 Pandemic is Zero Waste. Though we are in Orange Zone and getting all the essentials like groceries, Milk, meat, vegetables and fruits I make sure not to waste anything. We were buying lots of water melon (Blame the weather ufff) , I could see the water melon rinds going to the dustbin. I saw this rcp and immediately tried it, So only the water melon skin goes to the dustbin. Recipe: Peel the water melon skin, Cut and remove the pink part to eat, the light green is the rind. Rinds - 2 cups Grated( squeeze and remove all the water, it has to be tight packed when we press) Use the water in soups or simply pour it for the plants ( Remember 0 waste 😁) Sugar - 1 cup Ghee- 3 table spoon Cardamon powder Ghee fried Cashews- few Take a preassure cooker add ghee, then arrange the nicely squeezed watermelon rinds, add sugar and cardamom powder. Close the lid and keep it on fire, let it be in full flame. Cook for 20 whistles or till you get the caramelized smell, switch off and release the pressure. Add the ghee fried cashews, Mix and close the lid. Let it sit for 10 or 15 mins. Open and serve.
