Lunch with Leftover Rice Wondering what to do with yesterday’s leftover rice?! Well, here’s what I did today and you too can try perhaps ☺️ Today, I was feeling lazy to cook for myself. So, I prepared something easy and delicious- fried rice with beet root and corn. Ingredients: 1) A bowl of leftover/fresh rice 2) kaju. 3) some freshly boiled corn. 4) One small beet root (finely grated). 5) One tsp ghee. 6) Salt to taste. Method: Pour ghee in a pan, add the Kajus. Then stir for 2-3 minutes or until they become golden brown. Next add the grated beet and boiled corn. Add salt and stir for about 5 minutes. Add the rice thereafter and stir again for about 5 more minutes. Turn off the gas/induction and pour into a plate. Voila! Your dish is ready to be enjoyed. Happy eating! Well, I enjoyed my meal.
