Baklava Modak

Ingredients


For modak

Water 1 cup

Rice flour 1cup

Salt

Ghee 1tsp
For filling

Dry fruits of your choice 1/4 cup each (Almonds, Cashews, Walnuts and Pista)

Sugar 5tbsp

Cinnamon and 1/2tsp

Vanilla essence 1tsp

Salt; 1/4tsp

Orange zest of 1 orange
For Syrup

Water 1/2 cup

Sugar 1/4cup

Honey 2tbsp



Method
💖For filling

Preheat the oven to 180.Spread the nuts on a cooking sheet and bake for 7 min till fragrant and slightly toasted.Let it cool. After cooling pulse the nuts, sugar, orange zest, cinnamon powder, vanilla essence and salt in a blender till coarsely powdered.
💖For syrup

Heat a pan over med heat add water, 1/4cup sugar and honey and bring to a boil. Reduce heat to a simmer and cook until reduced and slightly thickened, for about 8-10 min.
💖For covering

Bring 1 cup water to a boil. Add 1 tsp ghee and salt add the rice flour and mix. Turn off the heat immediately. Keep a cover and let it stand for 10-15 min to cool. Knead the flour with slightly oiled hand into smooth dough. Keep it covered in moist cloth.

Keep a large vessel with some water to steam the modaks. Take a; strainer or steamer; line it with a thin cloth.

Make small rounds with the dough. Press with fingers to make flat rounds. This should be thin and without any cracks.

Place the filling. Add a teaspoon of the sugar honey syrup to it.use modak mould to give shape. Place these modaks into steamersteam for 15-20 min.
