Mix Vegetables With Garlic Rice
-8-10 garlic cloves
-2 large white onion
-3 green chillies
-1 tsp cumin powder
-1 tsp chilli powder
-1/2 tsp asafoetida powder
-1/2 tsp ginger powder
-1/4 tsp turmeric
-1 can coconut milk
-1 cup washed dried red lentils
-2 cups water (add more if needed)
-salt to taste

*garlic rice*
-2 tbsp vegetable oil
-4 garlic cloves
-1 cup washed basmati rice
-1 cup water

Method
*chilli garlic curry*
-blend the chillies, garlic + onion into a paste before frying in a splash of vegetable oil on a low/medium heat for 10-15 minutes.
-add the dried spices + tomato paste then fry for another few minutes.
-add the coconut milk + water then heat up for a few minutes before adding the washed lentils before covering + simmering on a low/medium heat for 25-30 minutes, string often.
-once saucy, stir in some chopped coriander + the curry is done!

*garlic rice*
-in a large bottom pan, fry the thinly sliced garlic in the oil on a very low heat for 5 minutes before adding the rice then toasting + coating it the oil.
-add the water, turn on the lowest setting + then cover + leave for 20-25 minutes.
-take off the heat + leave covered for another 5 minutes before serving with curry + enjoy!
