My go to instant snack cum meal when I am too tired or lazy to cook. Super healthy, quite filling and super quick. Mix Veg Masala Marke :D Wash and chop 4 mushrooms, 2 tomatoes, 2 cucumber. (You can experiment with other veggies also- peas, carrots, zucchini, broccoli, beans, cabbage, capsicum, paneer)
In a pan heat 2 tsp oil and add a pinch of cumin seeds. Once they splutter add the mushrooms. As they cook they will leave water and become drier. Now dumo in the other veggies. Add a pinch of turmeric, pinch of dhaniya powder, jeera powder, salt to taste, mixed herbs, chilli powder. Adjust the spices as per your preference. Mix well and saute on a low flame. Don't cook the veggies till they are too soft. There should be a nice crunch to it. Once done turn off the flame and transfer to a plate. Garnish with olives and enjoy! You can also squeeze a lemon on top if you want some tangy flavour. I literally licked the plate in the end 🙈😜

Wow this is a must try! Thank you for this awesome idea, Aditi! My 10 year old is hungry always. He'll love this. Btw, can you suggest other quick snack recipes for kids. Mine seems always hungry and I run out of healthy options.
