Ingredients (for 2 servings) 1/2 cup oats 1/4 cup semolina 1/2 Carrot finely chopped 4-5 beans finely chopped 1/2 capsicum finely chopped For tadka (a pinch of hing, 1 tsp mustard seeds, 1 green chilli finely chopped, few Curry leaves, 1 tsp urad daal, 1 onion finely chopped, 5-6 cashews) Salt to taste Juice of 1 lemon 1 tbsp oil Water for cooking Method 1. Take a pan and dry roast the oats without any oil or ghee. Take them out in a plate and let them cool. 2. Boil about 2-3 cups water in another pan and add carrots, beans and capsicum to boil in it for 10 minutes. 3. Now take that pan or kadai in which you have earlier roasted oats. Heat it and add oil. When hot add all the tadka ingredients and semolina and saute for a minute or two till semolina gives good smell. We don't need to roast much. 4. Add the roasted oats now and salt and mix well. Now add the water with boiled veggies in it and let the upma cook on simmer till a right consistency is attained. Enjoy hot by sqeezing some lemon juice on top!!
