Ingredients for Open Masala Egg - SK Khazana Recipe
Eggs 4
Olive oil 1 tablespoon
Green chillies finely chopped 1-2
Garlic finely chopped 1 tablespoon
Ginger grated 1 tablespoon
Medium onion sliced 1
Large tomato finely chopped 1
Fresh jalapeno sliced 1
Button mushrooms sliced 8-10
Spinach shredded 1 cup
Salt to taste
Black peppercorns crushed to taste
Schezwan chutney 1 tablespoon
Fresh coriander leaves chopped 1 teaspoon
Brown bread slices to serve
Method
Heat olive oil in a non-stick pan, add green chillies, garlic, ginger and onions and sauté till onions are translucent.
Add tomato and jalapeno, mix and cook till the tomato turns soft and pulpy. Add mushrooms, mix and cook for 1-2 minutes.
Add spinach, mix and cook till the leaves wilt. Add salt and crushed peppercorns, mix and cook for 2-3 minutes.
Add Schezwan chutney and mix well. Break in the eggs directly into the pan over the vegetables, sprinkle crushed peppercorns, salt and coriander leaves, cover and cook till the eggs are fully done. Serve hot with bread slices.
