Pumpkin soup!!!
Okay so a lot of us aren't fans of pumpkin but I am sort of in love with it . . Whether it is pumpkin halwa or pumpkin sabji or soupy pumpkin . .
I used to make normal pumpkin soup until our Sri Lankan landlords introduced me to this recipe!
Mint pumpkin soup! I would've never imagined this combination and I loved so I want to share it . . It's easy peasy really
And healthy for #thebeebee
Sautee pumpkin in a pot . . Add about 5-6 mint leaves . . Add water and boil till pumpkin is soft . . !

Then blender it . . !

Add some freshly ground pepper and salt to taste !

Yum yum !

My mom's recipe-; in a small pressure cooker, saute chopped onions in butter, add pieces of pumpkin(Max amt), tomato, onion, tablespoon of washed massoor daal. Give it 3-4 whistles, blend, add salt/ pepper. Top with grated cheese. Can add small pieces if pasta as well. Enjoy!
