Quick easy nutritious fried rice recipe.
When I am running out of ideas or want to make something quick yet healthy for my kids. This is the recipe which I usually make. My kids loves it as it is a colorful and yummy treat for them and I love it because it make as a complete meal which is quick easy and very nutritious.



Ingredients

Cooked rice 1 cup

Medium Grated beetroot 1

Capsicum chopped 1/2

Small onion 1

Ginger garlic paste 1/4 teaspoon

Carrot grated 1

Egg 1 (optional)
While cooking rice add grated beetroot, carrot in cooker. Once rice is cooked take a pan add 1 tablespoon of oil let it heat then add cumin seeds, mustard seed, curry leaves, chopped onion, Ginger garlic paste saute it until raw smell goes off, then add a pinch of Turmeric salt (as per taste),

Add capsicum and let it saute for few minutes. Then add egg and scramble it cook for few minutes and then add cooked rice. Toss everything well. Add a dash of lemon juice while serving. Or serve it with curd. And some salad aside.
