#recipe Papad ki sabji!! This dish comes from Rajasthan (an area where people created amazing recipes out of little that was available) and is a savior when one is out of veggies at home or is bored of all other things!! Ingredients 2-3 papad (roasted and broken in pieces)
1-2 onions chopped or grated
1 big tomato chopped or grated
1 tsp garlic chopped
1 tsp grated ginger
Salt and red chilli powder to taste
1 tsp turmeric powder
A pinch of Hing
1 tsp sabut zeera
1 bay leaf
1 whole sookhi red chilli
1 tbsp dhaniya powder
1/2 garam masala (optional)
2 tbsp beaten curd
Fresh coriander for garnish
Oil and water for cooking Method 1. In a pan add 2 tbsp oil and heat it. When hot add Hing, sabut zeera, sookhi red chilli and bay leaf to crackle. 2. Add onion, garlic and ginger and saute well till onion is almost reddish. Then add tomatoes, little water and roast everything by mixing and pressing the tomatoes a bit. 3. While masala is getting ready add salt, turmeric powder, red chilli powder and roast well again for few minutes. Add dhaniya powder, garam masala and mix well and bhoono till oil separates. 4. Now add beaten curd and about 1.5 cups water and cook the gravy on simmer. Add roasted papad pieces and switch off the gas. Garnish with coriander and serve hot with chapati or rice.
