Presentation of food is not only important for us adults, but also kids love eating a dish that is well decorated and colourful. We eat something through our eyes before we actually eat it!
I made this simple sooji ki Kheer and accentuated it's flavor, health potion and look like this!!
For sooji ki Kheer, I have first dry roasted about 4 tbsp sooji in a pan till it smelled good and nutty and then added half cup water, stirred it and switched off the gas. Sooji will soak the water. It is essential step, else sooji will soak milk and not get cooked well.
Later I added about 350 ml milk and nuts to it and stirred it well. After 2 boils, I added 3/4 cup grated jaggery and switched off the gas and stirred it till it got dissolved completely. One can also add sugar instead of jaggery.
When the Kheer was completely cool to one set I have added Mango puree and decorated it with tutti fruity and to the other set I have added rose syrup and added tutti fruity.
One can add other fruit purees like that of strawberry, chikoo, apple etc but has to be sweet, else milk will get sour. Also one can add chopped fruits in this Kheer and garnish with nuts. Another idea is to melt little chocolate powder on double boiler with little sugar and use that or decorate with chocolate sauce!!
Serve this as a cool and light summer dessert.
