#recipeideas Meethey chawal!! We usually make this dish as a Prasad for Pooja but it's one good dish toddler mom's can use. It's full of carbohydrates that give energy and adding crushed nuts to it makes it more healthy. Also one can make it with Jaggery or gud which is very healthy. Mom's can also pack in it tiffin as a sweet dessert for kids. Ingredients (for 7-8 servings) 1 medium bowl basmati rice
2 tbsp oil
7-8 cloves
1 moti elaichi
4-5 choti elaichi
Small piece of cinnamon
5-6 black peppercorns
3/4 cup sugar or crushed Jaggery
7-8 strands of kesar dipped in little milk
Chopped nuts of choice
Water If using Jaggery, mix it in hot water so that a solution is made. If using sugar, you can use directly. Method 1. Soak the rice for at least 7-8 hours or even overnight before making the dish and then strain them and keep aside. 2. In a heavy bottom pan add oil and heat it. Then add all khadaa masala and let it crackle. Then add strained rice and mix with light hands. 3. Now add about 3/4 bowl of water; (same size as you have used for rice) and mix and cover the pan and let it cook on simmer by placing a tawa or griddle beneath it for 10-15 minutes. Check in between for rice to be cooked. 4. Now open lid and add kesar, nuts and sugar or Jaggery solution. Mix with light hands. Again cover with lid. Sugar leaves water and Jaggery solution has water. 5. Cook for around 10 minutes. Rice will be dry or a little wet. Switch off the gas and let the covered rice be on griddle like that only. After 30 minutes serve this rice hot. For kids try and remove khadaa masala before serving as they find it inconvenient.
