"Scrambled Egg Poha
Egg - 2
Poha - 1 cup
Oil - as needed
Curry Leaves - few
Onion - 1/2 chopped
Tomato - 1/2 chopped
Capsicum - 1/2 chopped
Turmeric Powder - 1/2 tsp
Salt - as needed
Coriander leaves - for garnishing
Rinse and leave poha in a strainer for a while without the need of soaking, for grainy poha. If you want very soft poha soak it for just 2 minutes and strain and set aside.
Take a pan add oil, curry leaves followed by onion and tomato.
Once all the above are well cooked add whisked egg in the centre making a well. Allow it to sit for a minute or two and then mix all the ingredients.
Add the spices now. I'm adding turmeric powder here. Mix and fry all the ingredients well for a minute and then add poha.
Mix it well, cover and cook in simmer for about 2 minutes.
