Since I don't want to skimp on my daily quota of 2 eggs, I try to bring some variety into the routine. I am a big fan of veggies and always try to combine it with eggs. I call this the Scrambled Veggie Platter. It's very simple and quick to prepare, very healthy and tastes delicious. Wash and chop veggies of your choice. I have used 6 mushrooms, 2 small tomatoes and 1 cup frozen peas since that was what available in the fridge :D You can use any veggies like carrots, capsicum, cucumber, broccoli, beans.

In a pan heat some oil. Add 1tsp of cumin seeds and let it splutter. Now add the mushrooms and cook it till it leaves water. Now add the remaining veggies and stir. You can add seasonings of your choice here. I added mixed herbs, chilli flakes, a pinch of turmeric, dhaniya powder and a pinch of pepper. Mix well and cook for a couple of minutes till the veggies become slightly soft. Add salt to taste and mix. Now break 2 eggs into this and stir well till they become crumbly. You can also add 2 to 3 tbsp of milk if you want the texture to be more moist. But as you are adding the veggies, you won't really need it. Mix well till everything gets combined well. Don't cook for too long as it might give a burnt flavour to the eggs which is not really that great. That's all! Once done turn off the stove and transfer tona plate. Garnish with toppings of your choice. I added olives. You can get creative and add cheese, roasted peanuts, roasted nuts, seeds like melon, pumpkin, flax and have a plateful of heavenly goodness. I had omlette today...n don't see any drastic changes in baby.. hence proved i can eat eggs ;)

nop. food and feed no connection. its the nutrients that are sent to baby via milk. the baby wont eat the egg ! so pls go indulge. eat what ever u want.. what ever is healthy. its good for u and baby
