I have named this receipe sweet potato delight because it's actually a delight to have something so healthy like a sweet potato and that too in a yummy way!!
There is no end to writing about how sweet potato is a super food. It has lots of fibre and other vital nutrients. It improves digestion, helps weight gain specially in toddlers, treats diseases like bronchitis, arthiritis, asthama, inflammation, ulcers etc and also helps build immunity!! It's a task to cook sweet potatoes so I am also giving an easy way out for that!!
Ingredients
3-4 sweet potatoes (boiled)
2 tbsp oil
Spices to taste (salt, red chilli powder, black pepper powder, aamchoor, Chaat masala, zeera powder)
Fresh corriander for garnish
Water for cooking
Method
1. Clean the sweet potatoes well and then let them dry. Heat a pressure cooker. Add 1 tbsp oil and spread it well in the cooker. Then add about 1-2 tbsp water and arrange the sweet potatoes. Close the lid with whistle and cook on simmer till one whistle. Let the pressure release. You cooked sweet potato is ready.
2. Peel the sweet potatoes and cut in pieces. Saute these pieces well on a non stick pan till they are crisp.
3. Add all spices and mix. Garnish with green corriander and serve. You can also saute some ginger Julian's with this to add to taste.
