So I had been crazy busy the past few days and wasn't able to upload and breakfast ideas :D here is something fun and yummy I tried today. It was suggested by a friend and I loved it so much that it has become pretty much my staple for now.
I made a double egg omelette on a bed of veggies and teamed with one vaati of chilled aam ras and omgg I was in food heaven for like 5 minutes since that was the amount of time I had to eat my food. My daughter was not really amused that I was munching on food rather than watch her go baabaa booboo :D
Recipe for the omelette:
Clean and dice 4 mushrooms, 1 medium tomato, handful of spinach, 1 or 2 green chillies, some coriander leaves. (you can add any veggie of your choice here. Think capsicum, green peas, onions, cauliflowers. Make it nice and colourful and chop the veggies fine)
Saute them together in a non stick pan. Sprinkle salt, a pinch of jeera powder, a pinch of haldi and any other masala you want.
Meanwhile when this is cooking beat 2 eggs well. You can also add a bit of milk. It helps in making it fluffy. Once the veggies are cooked, flatten them with a spatula making a sort of bed and pour the egg mix all over.
Cook the dish on medium and place a few pieces of cheese here and there. Let it cool some more before you flip it. If you can't flip the whole thing at one go, use the plate method. Keep a plate on the pan and invert the omelette into it. In case you can't manage the omelette ends up breaking doesn't matter. It will still taste spectacular :D
Let it cook both sides. Once it becomes nice and fluffy and the cheese is a bit melted, turn off the stove.
Transfer it to your most colourful plate.
Take a seat and enjoy.
Nothing like a few minutes of peaceful chewing before you get back on the grind! :-D
