Sweet Potato Khichdi

On fasting days, we are always on the lookout for nourishing but simple recipes that sync with upvas rules. Here is a fabulous Sweet Potato Khichdi, which is just perfect for such occasions..
Ingredients

3 cups peeled and grated sweet potatoes

1 cup peeled and grated potatoes

2 tbsp oil

1 tsp cumin seeds (jeera)

5 curry leaves (kadi patta)

1 1/2 tsp green chilli paste

1 tbsp lemon juice

2 tbsp finely chopped coriander (dhania) , optional

1/4 cup roasted and coarsely crushed peanuts

1 tbsp sugar

salt to taste

Method

Heat the oil in a deep non-stick pan, add the cumin seeds and curry leaves and sauté on a medium flame for 30 seconds.
Add the sweet potatoes, potatoes, mix well and cover it with a lid and cook on a medium flame for 8 to 10 minutes, or till the potatoes are cooked, while stirring occasionally.
Add the green chilli paste, lemon juice, coriander, peanuts, sugar and salt, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
Serve hot.... #vratkakhana
