Sweet Potato Salad

Ingredients for Warm Sweet Potato Salad - SK Khazana Recipe
Large sweet potatoes 2
Medium white onions cut into cubes 2
Garlic cloves 12-16
California walnut kernels halved 10
Black peppercorns crushed to taste
Salt to taste
Extra virgin olive oil 2 tablespoons
Fresh thyme a pinch
Fresh parsley chopped to garnish
Dressing
Fresh turmeric paste 1 teaspoon
Tahini 1 tablespoon
Lemon juice 1 tablespoon
Salt to taste
Black peppercorns crushed to taste
Grainy mustard 1 teaspoon
Olive oil 2 tablespoons

Method
Step 1
Preheat oven to 180º C.
Step 2
Thickly slice sweet potatoes and spread them on a baking tray. Add white onion cubes, garlic, walnuts, crushed peppercorns, salt and olive oil and mix well. Add thyme and mix again.
Step 3
Keep the tray in the preheated oven and roast for 20-25 minutes.
Step 4
To make dressing, take turmeric paste in a bowl, add tahini, lemon juice, salt, crushed peppercorns, grainy mustard and olive oil and mix well.
Step 5
Transfer roasted vegetables on a serving plate. Drizzle the dressing on top and garnish with parsley. Serve warm.
