This dish is very spicy smokey yummy to taste; do try this


Chicken angara

Ingredients


Chicken 1/2kg

Onions sliced 3

Tomatoes 2 big

Ginger garlic paste 2tbsp

Curd 1cup

Malia 2 tbsp

Red chilli powder 1 tbsp (medium spicy)

Haldi 1 tsp

salt to taste

Coriander leaves

Ginger julienne few

Spice powder grind to fine powder

Kashmiri red chillies 5

Coriander seeds 1tbsp

Jeera 1 tsp

Cloves 4

Cardomons 3

Small piece of star anise 1

Peppercorns 5

Small sticks of cinnamon 2


Method

👉Mix chicken with curd ginger garlic paste malia red chilli powder haldi salt mix well till all ingredients are well combined

👉Then place a silver foil on the marinated chicken keep a hot burning coal on the foil sprinkle few drops of oil or ghee the coal will start to smoke cover lid and set aside for atleast 2 hours for marination.

👉Dry roast dried red chillies coriander seeds jeera cloves cardomons cinnamons peppercorns star anise for just a 2 min on med heat till aroma comes. Then remove from heat cool completely and grind into very fine powder

👉Heat oil fry sliced onions till brown drain remove cool and grind to a fine powder

👉Grind tomatoes; into a fine puree

👉In same oil in which we had fried onions add the marinated chicken mix well bring to a boil on high heat then cover and cook on high flame for 5 min.

👉After 5 min add pureed tomatoes ground fried onions and the spice powder

Mix well bring to a boil cover and simmer for 30 min or till chicken is tender

👉Then open and check if consistency is too thick add little water 1/2cup and boil once then remove from heat

👉Again give coal smoke just like we had given while marinating chicken open lid after 10 minutes

👉garnish with coriander leaves and ginger julienne.

👉Serve hot with naan tandoori naan paratha.
