Today I am posting a healthy recipe called Venpongal which is eaten for breakfast in TamilNadu.
Ingredients
Raw rice - 1 cup
Moong Dhal - 1/2 cup
Salt to taste
Cumin seeds - 1 tbsp
Ghee - 1/4 cup
Cashewnuts - some
Ginger - 1 /2 inch piece
Pepper - 1 spoon, half full pepper and 1/2 powdered pepper
Preparation:
Wash moongdhal and raw rice and
Dry roast moong dhal and rice in ghee till it turns aromatic and keep it in cooker, add small pieces of ginger, salt and mix well. To it add 4 cups of water. Cook the rice and dal on medium flame, pressure cook it for 5 whistles. On the other side heat a tawa add ghee, fry the cashewnuts and keep it aside. Then add the cumin, pepper and switch off the flame. Add pepper powder into the ghee and mix everything well for 2 minutes.Once the pressure in the pressure cooker settles, open the cooker and mash the rice and dhal with a ladle, then add the roasted cashewnuts, and the tempering if pepper and cumin along with ghee and mix well. If needed add more ghee. Now the venpongal is ready to serve. It can be served with coconut chutney or sambhar. For small children ginger and pepper can be avoided.
