Today I had an early brunch since we had to take our baby for her vaccination. I didn't really have much time to make an elaborate meal and I was out off vegetables pretty much. So I decided to scavenge my fridge and create something quick and simple. So I ended up making Moong Dal khichdi with basmati rice, An amazing veg stir fry and offcourse my regular dose of omelette :D

The khichdi is very simple. I am sure most of us know how to make it. But the recipe for the star of the meal I would like to share.

Veggie stir fry:

1  large capsicim

1 large carrot

1 large tomato

1 cup of frozen peas

Handful of spinach leaves

2 zucchinis or english cucumbers or our normal cucumbers

half a cube of cheese

2 tsps of butter

handful of green olives

seasonings of your choice (I used mixed herbs, chilli flakes and 1 packet of pizza toppings I found :D)

salt to taste.
Wash and chop all the veggies. Put the butter in a non stick pan. Once it sizzles dump all the veggies and sauté on a medium flame. When they become slightly tender add the seasonings, sprinkle salt and put in the cheese. Mix well till you see the cheese melting slightly.

Turn off the flame and transfer to a bowl. Garnish with olives. You can even microwave for a few seconds to melt the cheese further and absorb the spices.
That's it! Your meal if ready in a jiffy. You can have this veggie bowl as a side with pretty much anything. You can add a variety of veggies like steamed broccoli, cabbage, mushrooms, beans anything. Get creative, get colorful and enjoy! This is a good way to make your kiddos eat the veggies too! And it a wholesome meal with carbs, proteins and fats. I finished my meal with a bowl of chilled yogurt and a big smile on my face :D
