Beating the Monday blues with this masala khichdi loaded with ghee, vegetables alongwith Rajasthani kadhi, aloo bharta, roasted papad and homemade pickles😋😋
For the Masala Khichdi..
Wash yellow moong dal and rice nicely in 2-3 waters..In a pan add ghee..Once heated add pinch of hing,jeera, Rai seeds..once they start spluttering add crushed ginger,garlic alongwith cloves, cardamom,bay leaf..roast it now add chopped onions and let it fry till golden brown..Now added chopped vegetables like (potato,French beans,peas,carrot, bottle gourd)..Roast it and add washed rice and moong dal..Add salt, turmeric,red chilli powder to taste, pinch of garam masala..Roast it and add water..let it simmer on medium flame covered by a plate..If you are in a hurry can even make in pressure cooker and give 2 whistles but taste of making in kadhai or pan is totally different..
Once done switch off the gas and serve piping hot with accompaniments of your choice...Add dollops of ghee on above too😋😋
