Golden Bread Vadas : Just what you need for tiffin or tea-time

We have all known and loved Medu Vadas. Now with a twist to this old favourite, presenting, Bread Vadas, which are relatively faster to rustle up and taste amazingly superb.

My son has developed a sudden liking for Medu Vadas; he fondly calls them savoury donuts. While we feast on idlis, he prefers the fried hot vadas. I have often thought of making fresh vadas for him at home, especially as a tiffin snack. But I never got to making them because of the pre-planning required for soaking pulses and fermenting the batter. So I was really thrilled to find out that one can make similar looking vadas without much planning and that too instantly. 

I chanced upon a recipe of these scrumptious vadas that look just like “medu vadas” but are made using bread and other easy-to-find ingredients in the kitchen. The peanuts are my addition and they add a much needed crunch to the otherwise soft vadas. 

The fact that you can make the dough and shape the vadas a night before and quickly fry them in the morning is what I like the most about this recipe. So, if you are a mom who decides at the 11th hour what healthy and delicious snack to give in your child’s tiffin, then this recipe is definitely for you to try. 

 

Bread Vadas
Makes 6 (refer size in image)

Ingredients

• 1 cup finely chopped bread (white or brown bread)
• 2 tablespoons Semolina / rawa
• 2 tablespoons rice flour
• ½ teaspoon cumin seeds (jeera)
• 1/4th teaspoon turmeric powder (haldi)
• 1/4th teaspoon chilli powder
• ½ teaspoon cooking soda
• Salt as per taste
• 2 tablespoons freshly chopped coriander
• 1/4th teaspoon grated ginger
• 2 tablespoons crushed peanuts (raw or roasted)
• ½ cup thick curd

 

Method

Step 1: Take a big mixing bowl and add bread, semolina, rice flour, cumin seeds, turmeric powder, chilli powder, cooking soda and salt in it

 

 

Step 2: Using your fingertips, mix the ingredients together to get a fine powder

 

 

Step 3: Now, mix in the chopped coriander, grated ginger and peanuts

 

 

Step 4: Add the curds and mix well to form a dough. Keep this aside for 10mins

 

 

Step 5: Divide the mixture into 8 equal parts. Shape them into balls, flatten slightly and then use your thumb to make a hole in the centre. If you find the dough to be too wet, add a tablespoon of rice flour. Also, it is a good practice to oil your hands well before shaping any dough, especially when it is soft.

 

 

Step 6: Place the shaped vadas on an oiled plate and start to fry them in hot oil.

 

 

Fry them well on a medium flame on both sides. Serve hot accompanied with ketchup or fresh coconut chutney.
