Khakhra, a savoury crisp disc made of flour and available in many flavours, is a popular on-the-go snack in the Western states of Gujarat and Maharashtra. It is a great snack for kids as it is loaded with carbs and can be safely stored for weeks!

Since the time my son could chew, I introduced him to khakhras and that has been his favourite! Khakhras are any day a better alternative to chips and other processed snacks as they are homemade using wheat flour and are free from any additives. They are crisp flavoured rotis which can be carried anywhere and munched on without any guilt.

Homemade Jeera Khakhra:

Makes 15 khakhras

Ingredients:

2 cups Whole wheat flour (roti ka atta)

1 teaspoon Jeera (cumin seeds)

2 tbsp Oil

1 tsp Salt

½ tsp Haldi

Dry whole wheat flour for rolling

Ghee (clarified butter) for roasting

Method:

Step 1 – Dry roast jeera in a pan till you get a fine aroma. Take off flame and immediately crush it using a pestle.

Step 2 – Put the flour on the surface you are going to knead dough. Make a well in the centre and add all the ingredients except the ghee.

Step 3 – Using water, starting making the dough. Knead well to get soft, pliable dough , as seen in the images.

Step 4 – Divide the dough into 15 equal portions and roll them into smooth balls.

Step 5 – Roll out each ball into a circle using a rolling pin and dry flour.

Step 6 – The khakhra should be evenly rolled and thin as shown in the pic. Stack each khakhra over the other ensuring there is some dry flour sprinkled in between to prevent them from sticking to each other.

Step 7 – Heat a griddle and roast each khakhra, on both sides, till half cooked.

Step 8 – Once half cooked cool them well.

Step 9 – Heat the Roti maker, place one khakhra and apply some ghee on both sides. Close the roti maker and roast till the khakhra is brown and crisp. Repeat the process for all khakhras. Store them in an airtight container once they have cooled completely.

Step 10 – In case you do not have a roti maker, the khakhras can be roasted on a griddle too by continuously dabbing them with a cloth to prevent any blisters. Roast on sides, applying ghee, till brown and crisp.

Happy munching!
