Toddler Snack Series – Masala Mushroom Quesadillas

Quesadilla is a popular Mexican dish that usually consists of cheese stuffed between two tortillas and grilled. Tortillas are similar to rotis and mostly made of corn or wheat. I like this snack for the fact that it involves chapatti along with healthy stuffing of vegetables or pulses. A very filling option when travelling or as Tiffin treat; kids love it for it has oodles of cheese and because of cheese you can mask any vegetable inside the snack. This recipe has mushrooms but you could use any finely chopped vegetable or even boiled and mashed pulses like rajma (kidney beans), chole (chickpeas) or whole moong (green gram).

Masala Mushroom Quesadillas:

One time snack serving for a toddler

 

Ingredients:

 

3/4th cup chopped mushrooms  

1 teaspoon finely chopped garlic

1/4th cup chopped onion

1 tablespoon chopped coriander leaves

1/2 teaspoon chilli flakes

1 cube of cheese or 2 tablespoon grated cheese (to be added in the mixture)

1 teaspoon butter

1 teaspoon oregano

 

Salt as per taste: 

 

Oil for roasting quesadillas

2 (6 inch) chapattis or corn tortillas

2 tablespoon grated cheese (to be used during assembling)

Method

 

Step 1 – In a non stick pan, heat the butter, sauté garlic, onion, oregano and salt in it till onions turn translucent.

 

Step 2 – Add in mushrooms, coriander leaves and chilli flakes. Give a quick stir over high flame and switch off the gas. We don’t want the mushrooms to leave out water and shrink.

 

Step 3 – Immediately, add the cheese. If using cube, grate it and add.

 

Step 4 – Take one chappati / tortilla and spread out the mushroom mixture on it. Spread the cheese over it and cover with another chappati / tortilla.

 

Step 5 – Brush little oil on both sides of the quesadilla and roast it lightly on a hot griddle.

 

Step 6 – Take the roasted quesadillas off flame, cut into 4 quarters and serve hot.
