Muthias are popular steamed snacks savoured by the Gujarati community. They are made with different kinds of flour, commonly wheat flour, and flavoured with vegetable and spices. The most common version of muthias is Methi (fenugreek) Muthia or Lauki (Bottle gourd) Muthia. 

These are extremely healthy as they are steamed and the nutrition in the vegetables and flour are retained. Muthias can be stored for long and are an ideal travel snack for kids. They are great for toddlers who have just started to pick food and bite into it.

Methi Muthias

Ingredients

  • 1 cup whole wheat flour / aata  
  • 2 tablespoon gram flour / besan
  • 2 tablespoon dried methi / fenugreek or, 4 tablespoon chopped methi / fenugreek leaves
  • 1 tablespoon oil
  • 1/4th teaspoon lemon juice
  • 1/2 teaspoon red chilli powder
  • 1/4th teaspoon turmeric powder / haldi
  • Salt as per taste

 

For the tempering

  • 1.5 teaspoon oil
  • ½ teaspoon mustard seeds / rai
  • 1 teaspoon white sesame seeds / til

 

Method

Step 1 – Take wheat flour, gram flour, methi, oil, lemon juice, red chilli powder, turmeric powder and salt in a thali. Add water and knead to make soft dough, like your chapati dough.

 

 

Step 2 – Heat water in a steamer. Divide the dough into 2 and roll into cylinders. Place in the steamer and steam for 20 to 25 minutes.

 

Step 3 – To check whether the muthia cylinders have cooked, stick a toothpick in it and if it comes out clean then they have cooked. Plus, the cylinder size will also increase. Let the muthia cylinders cool completely.

 

 

Step 4 – Cut the cylinders into thick slices.

 

Step 5 – To temper the muthias, heat oil in a non stick pan and crackle the mustard and sesame seeds in it. Place the muthias and roast them on both sides till they turn slightly brown. Serve hot or warm along with ketchup or any Indian dip.
