To my dissatisfaction, 'T' recently discovered the joy of consuming store bought biscuits and he can't seem to have enough of them! 'Mummy Bikkit', he says with his big doe eyes and should I refuse, 'Peeeez' he begs. Now how can this mummy say no to that?! So simple right?
So in my search for the healthy cookie, I came across this lovely recipe online which literally uses 3 essential ingredients. Oats, the instant kinds, over ripe bananas and cinnamon powder. Now of course you can add absolutely anything to the mix and make these your own. I went ahead and made them with what was available in my pantry.
These sure make an awesome healthy substitute to the evil Bikkit! And the best part is there is NO flour, NO added sugar and NO baking powder!
1. 1 cup Instant oats
2. 2 over ripe bananas
3. 1/2 teaspoon Cinnamon powder
4. A few crushed Walnuts
5. A few Raisins
Tip: One can add mango pulp, apple sauce, chocolate chips, roasted almonds and anything at all that your young one might fancy
Make them with just banana and oatmeal for babies who are teething or make them chunky with dry fruits and chocolate chips for toddlers
1. Mash the bananas first
2. Add in all the ingredients
3. Scoop out tiny blobs of it on a oiled baking sheet or flatten them out to the size you desire
4. Bake on 200°C for about 15-20 mins
5. Serve when cool
Note: They can be stored in the fridge or a cool dry place for about 2 days (not over)
