Panjiri is one dish which almost every Punjabi household prepares and adores. It is specially made in winters for everyone to eat. But, when a lady comes back home after delivery, this is prepared and distributed amongst friends and family as a token of celebration. Every household has its own recipe to prepare it. but I am sharing how it is done at my home. I have also tried and made a version of it which is very useful for toddlers and growing children.
Ingredients (For 250 grams of Ladoo):
2 cups Wheat Flour
1/2 cup Besan or Chickpea flour to add taste and flavor
2 tbsp Semolina
2 tbsp Rolled Oats
4 tbsp Ghee
1/2 cup nuts powder (Crushed Almonds, Cashews, Pistachios)
4 tbsp Sugar
1 tsp Elaichi Powder
Method:
This panjiri is really tasty and filled with nutrition. Earlier people loaded it with ghee but I have used very optimum amount. People also add things like khus – Khus, Bhuna jeera, Alsi and other ayurvedic herbs to it for lactating mothers.
These ladoos can be taken while travelling and stay good for a day.
