Tiffin Recipe: Punjabi Methi Ka Paratha

 

Paratha is a nutritious and filling meal for a child. My son gets paratha in Tiffin at least thrice a week. He loves to see colorful paratha. For him this one is just a green paratha but I make sure is power packed with flavor and lots of nutritional goodness.

 

Methi ka paratha is also a great Sunday brunch idea too. My favorite accompaniments with methi ka paratha is some mixed pickle/achar and Lassi/Mattha or buttermilk.

 

Directions to make Punjabi methi ka paratha-

 

Ingredients:

 

2 cups washed and chopped methi leaves

 

1 & 1/2 cups Flour/Atta

 

Salt & Pepper as per taste

 

1 red onion, finely chopped

 

 

Method:

  1. Mix all the ingredients together. Add water just enough for the flour to come together.
  2. Oil your hands and knead the dough. Rest for 10 minutes.
  3. Now simply make paratha as usual. Top with butter or achaar.
  4. I have not fried these paratha’s and just applied a little ghee on top after paratha is made.

 

 

 

For chaas/lassi (for 1 glass):

Simply add 2 tbsp Curd and 150ml of Water, Salt & Pepper and Roasted Crushed Cumin Seeds/jeera.

Blend in a jar and pour in a tall glass.

As in punjab.. it is made many tyms during winter.... and it is loved by everyone... being frm punjab we make it with wheat flour n mainly with makki ka atta... n its yummy green coloured roti with maize flour...
