3/4 cup wheat flour 1/4 cup rolled oats 1 tsp baking powder 1 tsp baking soda A pinch of salt Chopped walnuts
1 big or 2 small ripe bananas mashed 5-6 tbsp powdered sugar 1 tsp vanilla essence 1 egg 5-6 tbsp oil
In a bowl mash the bananas. Add sugar and oil and whisk it well so that a creamy mixture is formed. Then, add egg and vanilla essence and beat it again but not too much, just that egg becomes fluffy.
Sieve all the dry ingredients except oats and walnut. Then add oats and walnuts and mix. 3. Fold the dry ingredients slowly in the wet ones. 4. Prepare the muffin moulds by greasing them or using paper cups. Fill them 2/3 with the batter. 5. Bake the muffins in a preheated oven at 180 degrees for 15 minutes.
Please check on them with a knife or skewer stick and let them cool before demoulding.
