Easter always falls on a Sunday between 22 March and 25 April every year, depending on when the vernal equinox falls. The first Sunday after the vernal equinox, when the first full moon is when Easter is celebrated.

This year it falls on 17 April. Like all festivals, Easter too is incomplete without a scrumptious spread that is relished with family and friends.

1. Roasted Rack of Lamb

This elegant dish is perfect for celebrations and is surprisingly easy to make. You can pair it with risotto and green salads. 

Ingredients
1 (7 bone) trimmed rack of lamb
½ cup bread crumbs
2 tablespoons olive oil
1 teaspoon salt
1 tablespoon Dijon mustard
2 tablespoons minced garlic
¼ teaspoon black pepper
2 tablespoons chopped fresh rosemary
1 teaspoon black pepper

Preparation

a. Preheat your oven to 230 degrees C. Then move the oven rack to the centre position.
b. Mix bread crumbs, rosemary, garlic, pepper and salt in a large bowl. To make this mixture moist, add 2 tablespoons of olive oil then set this mixture aside.
c. Take salt and pepper to season the rack thoroughly. Then in a large skillet, heat 2 tablespoons of olive oil and sear the rack of lamb on all sides for 1 to 2 minutes. Set this aside for a few minutes. Then brush the mustard onto the rack of lamb. Now evenly coat the rack with the bread crumb mixture. Take a foil to cover the ends of the bones to prevent charring.
d. In the skillet, place the rack bone side downwards. Roast the lamb for about 12 to 18 minutes, in a preheated oven, by adjusting the temperature as per your preference. After about 11 minutes, take a reading in the centre of the meat using a meat thermometer. At this point, you can either remove the meat or let it cook longer as per your taste. After that ensure that the rack bone is loosely covered and let it sit for about six minutes. Your rack of lamb is ready to get carved and served.

2. Easter Egg Cheesecake

If you have leftover Easter eggs, try this no-bake easy vanilla cheesecake. For the most delicious taste, you can chill the cheesecake overnight.

Ingredients

Vegetable oil
200g digestive biscuits
150g icing sugar
80g unsalted butter, melted

250g chocolate mini eggs or leftover Easter eggs
400g double cream

400g full-fat soft cheese

1 teaspoon vanilla bean paste

Preparation
a. Take a deep springform cake tin and oil it. Then line it with baking parchment. Now crush the digestive biscuits and make them into fine crumbs using a food processor. Mix the crumbs with melted butter and press them into the base of the prepared cake tin. Let it chill for 30 mins.

b. Take half of the chocolate mini eggs and roughly chop them. Now take an electric whisk to beat the soft cheese with vanilla including the icing sugar. In a separate bowl, beat the double cream. Now take the chopped chocolate mini eggs and gently add them to the whipped cream and soft cheese mixture. Spread the cheesecake mixture over the biscuit base with a spoon. Then use a spatula to smooth out the surface and let it chill overnight.

c. The next morning, use a cutlery knife to carefully remove the cheesecake from the tin. Top the cake with the remaining whole chocolate mini eggs.

3. Cheesy Green Veg Gratin

Make a delicious dish by adding cauliflower cheese with green broccoli. Use the cauliflower leaves as well for extra flavour. 

Ingredients
200g spinach

1 cauliflower broken into florets (keep the leaves too)
900ml whole milk
70g unsalted butter

70g plain flour

150g mature cheddar
2 teaspoon English mustard

200g purple sprouting broccoli
½ bunch of finely chopped chives

Preparation

a. Boil a pan of lightly salted water to cook the cauliflower florets for 3 minutes. Add the broccoli and cook further for 2 minutes more. Now Take a colander to drain the boiled veggies and let them steam-dry.

b. In a saucepan, add the spinach along with 2 tablespoons of water and cook on low heat with the lid on for 3-4 mins. Now toss the spinach into a sieve and remove the excess moisture using the back of a wooden spoon. Then set this aside.

c. Heat your oven to 220C. In a saucepan, melt butter and stir the flour to make a thick paste for about 2 minutes. Remove the pan from the heat and gradually add milk while whisking in with the paste to make it lump-free. Bring the pan back to the heat and keep whisking until the mixture gets thick. Also add the mustard, almost all of the cheese and the chives and whisk them together. Add seasoning as per taste.

d.  Arrange the vegetables in an ovenproof dish. Then pour the sauce over them and sprinkle the remaining cheese. Now bake for about 30 minutes. Check to see if they turn golden and are bubbling which indicates it’s ready.

4. Roasted Carrot Coins

These snacks are easy and nutritious and can be added to any meal. You can make this delicious dish in no time and even the kids will love it.

Ingredients

4 medium carrots peeled and cut into coins

1 tablespoon olive oil
1/4 teaspoon kosher salt

1/4 teaspoon paprika

Preparation

1. Preheat the oven to 200 C.

2. Place the carrots on a baking sheet and toss in the paprika, olive oil and kosher salt to combine.

3. Now roast it for 30 minutes.

4. Your roasted carrot coins are ready to serve.

5. Lemon Spaghetti with Toasted Walnuts

This dish is packed with tons of flavour and Omega-3 fatty acids. It is easy to make and leaves a delicious aroma while cooking too. You can substitute whole wheat pasta for nutritional value.

Ingredients
2 tablespoons olive oil

1 cup roughly chopped walnuts
1/2 teaspoon kosher salt

1 pound dried spaghetti

3 tablespoon butter

2 lemons with zest and juice 

Preparation

1. Cook the pasta in a pan.

2. On medium-high heat, toast the walnuts for 5 minutes. Remove them from the heat once they are toasted and fragrant. 

3. Drain water from the pasta and reserve about 1/2 cup of the cooking water from the pan.

4. Now put the pasta back into the pot and add butter, walnuts, oil, salt, lemon juice and zest while stirring them. Add the reserved water to thin out the sauce if needed. Toss the pan to coat and your pasta is ready to serve.
