1. Basundi

Basundi is scrumptious a part of Gudi padwa celebrations / Credit – Gujrat Tourism

This delicious dish can be prepared in under 30 minutes and is made with milk. You can make a healthier version by replacing regular sugar with sugar-free options like jaggery.

Ingredients
8 cup milk
2 cup sugar
12 almonds for garnishing
2 teaspoon powdered green cardamom
1/2 teaspoon saffron
2 teaspoon lemon juice

Preparation
a. Bring the milk to a boil until it becomes thick in consistency and becomes half of the total quantity.

b. Add lemon juice and boil the milk for 10 more minutes on low flame if the texture of the milk appears to be grainy. 

c. Add saffron strands and sugar.

d. Stir the mixture properly and once done, take it off the flame. Garnish it with some cardamom powder, almonds, and saffron strands before serving.

2. Nariyal Modak

Not just Gudi Padwa, Modaks are associated with the festival of Ganesh Chaturthi as well. These sweets are made in different flavours and the coconut flavour is simply delicious.

Ingredients
1 teaspoon powdered green cardamom
2 tablespoon ghee
2 cups desiccated coconut
3/4 cup condensed milk
2 teaspoon rose water

Preparation
a. To prepare the modak mixture, add desiccated coconut, rose water, cardamom powder and condensed milk in a large bowl. Mix everything well in the bowl to form a smooth mixture.

b. Take a mould greased in some ghee and add the coconut mixture to shape the modaks. After some time, place the modaks on the plate by removing them carefully from the mould. Store the modaks in an airtight container for up to 10 days.

3. Sabudana Thalipeeth

Sago chapati or sago pancakes is best enjoyed with some chutney or chilled raita.It can even be had during fasting, just replace common salt with sendha namak.

Ingredients
2 tablespoon ghee
1 cup soaked overnight sago (sabudana)

2 large potatoes
1/2 cup finely chopped coriander leaves
1/2 inch ginger
1/2 teaspoon cumin powder
1 teaspoon lemon juice
4 tablespoon crushed roasted peanuts
Salt as per taste
Sugar as per taste

Preparation
a. Drain the excess water from the soaked sabudana to remove the moisture. Then in a large mixing bowl, mix all the ingredients well including sabudana and boiled mashed potatoes.

b. Now shape the mixture using your fingers into a flat and round base like a pancake.
c. Apply ghee all over a pan and put it on medium flame to heat it. Add the pancakes to the pan and fry evenly by flipping on both sides until they become brown.

d. Repeat the same steps with the remaining sabudana thalipeeths and serve with chutney.


4. Rice Kheer

This is a sweet recipe made of rice and can be made for any special event including Gudi Padwa.

Ingredients
1/2 cup basmati rice
2 cup milk
1/4 teaspoon spice cardamom
2 tablespoon ghee
1/2 teaspoon saffron
1 tablespoon mixed dry fruits
3 tablespoon sugar

Preparation
a. Add ghee to a pan over medium flame. Once the ghee gets hot, roast the basmati rice in it until it turns light brown.
b. Turn off the flame and put the roasted rice in a grinder jar to make a fine powder.
c. Boil the milk on a medium flame, in a deep bottomed pan. After that add the powdered rice and some ghee. Simmer the dish in low flame by covering it for about 10 minutes.
d. Add sugar and cardamom powder and stir until the milk quantity is reduced to half. Garnish with dry fruits and serve hot or cold.


5. Puran Poli

This popular Marathi dish is made of a mixture of sweet lentils and can be made using whole wheat flour for a healthier version.

Ingredients
1 cup all-purpose flour
2 tablespoon ghee
1 cup blanched chana dal
1/2 teaspoon refined oil
1 cup powdered jaggery
1 teaspoon powdered green cardamom1/2 teaspoon fennel seeds powder
1/4 teaspoon turmeric
1/4 cup water
1 teaspoon nutmeg powder
A pinch of salt

Preparation
a. To prepare the filling for Puran Poli, add the blanched dal to a heated pot with some  melted ghee. Roast the dal for 2-3 minutes and add ginger powder, cardamom powder, jaggery and nutmeg powder into it.

b. Mix all the ingredients well and cook the dal further for 2-3 minutes. Turn off the flame after that and let the mixture cool. Then take a masher to mash the dal.

c. To knead the dough, add turmeric, salt, refined oil and salt as per taste to the all-purpose flour. Mix everything and gradually add some water to make a dough. Do not add too much water as the dough needs to be stiff.  Then divide the dough into three parts.

d. After the above steps, you are now ready to make the Puran Polis. Take one part of the dough and add the chana jaggery mixture to fill the dough. After that, shape it back into a ball and roll it to make a chapati using a rolling pin.

e. Add the rotis to the preheated tawa on a medium flame. Cook both sides by adding ½ teaspoon ghee. You can serve it with tea.


6. Rice Chakli

Rice chakli is a popular Gudi Padwa recipe that you can easily prepare at home / Credit – Pixabay

The crispy texture and the spicy-buttery flavour makes it perfect not just for festivals like Gudi Padwa, Diwali but also for regular snacks.

Ingredients
500 gm rice flour
4 tablespoon butter
2 tablespoon sesame seeds
Refined oil as required
4 tablespoon red chilli powder
1/2 cup gram besan
1 teaspoon asafoetida
Salt as required

Preparation
a. In a bowl, mix all the dry ingredients, except sesame seeds, with melted butter. Wash the sesame seeds and add them to the rice and gram flour mixture to knead the dough by adding some water. Make a soft dough so that the chaklis are crispier.

c. Put the flame to medium-high and heat a skillet with some refined oil. Once the oil gets heated, add some dough in circular motions and deep fry the chaklis until they turn brown. You can even use a store bought chakli maker to shape the chaklis

Serve them with coffee or tea.
