Sauteed mushroom and paneer with couscous/quinoa

Ingredients:

  • Paneer - 1 pc (matchbox size)
  • Mushrooms - 4 pieces
  • Olive oil - 1/2 tsp
  • Lemon juice - squeeze (alter as per taste)
  • Plain water - 1 cup
  • Broccoli, finely chopped - 2 tbsp 
  • Couscous / quinoa - 2 tbsp cooked
  • Salt and pepper - use minimum to taste
  • Freshly chopped Parsley - 1 tsp

Method:

Cut paneer into small cubes. Heat olive oil in a large skillet. Saute it for about 2-3 minutes and toss. Add lemon juice, water, mushrooms and broccoli. Simmer for 3 to 4 minutes. Sprinkle with a pinch of salt and pepper and serve with couscous or quinoa. Garnish with parsley if desired.
