Veg Saagu


I tasted Veg saagu in the Udipi hotel in my childhood. It's a Karnataka dish. Combined with veggies and coconut. I totally love the taste. Then my mother cooked for me. And I became a fan of that recipe. Recently I invited guests for dinner and I prepared this. It showered compliments. One of the easiest recipe in my list.


Ingredients :


For gravy : * cashews ( fistful)

* Roasted chana dal - 2 tsp

* fistful coriander leaves

* green chilies-2

* Onion - ¼ sliced

* cloves- 2

* Ginger - 1/2 inch

* 1 inch cinnamon stick

* black pepper-3

* coconut - 2 tsp

Sauteeing: 🍲 Carrot, beans, cauliflower, capsicum, peas - 1 cup

🍲 mustard seeds

🍲 urad dal

🍲 cumin seeds

🍲 curry leaves

🍲 onion finely chopped-1/2

🍲 hing- pinch

🍲 turmeric

🍲 salt

🍲 oil


Procedure :

🍲 Grind all the gravy ingredients into a paste by adding little water. Keep aside.

🍲 Take a pan and and cumin, curry leaves, mustard, urad dal, hing and saute well till the aroma comes.

🍲 Now add onions, saute them for a minute and add veggies saute well. Then add salt and turmeric. Mix well.

🍲 Finally, add gravy and mix well. Cook for 7-8 min or till the veggies gets cooked well. Garnish with coriander leaves and serve hot with chapathi, puri, parota, roti etc.
