Navratan Pulao

Ingredients for Navratan Pulao - SK Khazana Recipe

Long grain rice washed and soaked for 30 minutes 1 1/2 cups

Medium potato cut into small cubes 1

Cottage cheese (paneer) cubes 1/2 cup

Carrot cubes 1/2 cup

Cauliflower cut into small florets 1/2 cup

Mushrooms sliced 1/2 cup

Soya granules soaked 1/4 cup

Corn kernels boiled 1/2 cup

French beans cut into strips 1/2 cup

Green peas blanched 1/2 cup

Ghee 3 tablespoons

Cashewnuts 10-12

Almonds 8-10

Raisins 15-18

Cloves 3-4

Black peppers 5-6

Green cardamoms 2-3

Caraway seeds (shahi jeera) 2 teaspoons

Salt to taste


Step 1

Heat ghee in a deep non-stick dish pan, cashewnuts, almonds and raisins and shallow-fry for 2-3 minutes. Drain into a bowl.

Step 2

Add cloves, peppercorns, green cardamom, caraway seeds, potato and cottage cheese and sauté till light brown.

Step 3

Add carrot, cauliflower, mushrooms, soya granules, corn kernels, French beans and green peas, mix and sauté for 2-3 minutes.

Step 4

Add rice, salt and 3½ cups water and mix well. Add the fried nuts, mix well, cover and cook till done.

Step 5

Transfer into a serving bowl and serve hot.
