Tortilla Pizza


Tortillas 4

Olive oil to brush

Pizza sauce 6 tablespoons

Large yellow capsicum cut into thin strips 1

Large red capsicum cut into thin strips 1

Large green capsicum cut into thin strips 1

Medium onions quartered and layers separated 2

Button mushrooms sliced 6-8

Cherry tomatoes sliced 6-8

Green olives pitted and sliced 4-6

Black olives pitted and sliced 5-6

Fresh basil leaves 16-20

American corn kernels boiled 1/2 cup

Salt to taste

Black peppercorns crushed to taste

Processed cheese grated as required

Red chilli flakes to sprinkle


1) Preheat oven to 180° C.

2) For one portion, place 1 tortilla on a baking tray and apply olive oil on it. Spread 1½ tbsps pizza sauce on it.

3) Place some coloured capsicum strips, onions, mushrooms, cherry tomato, green olives, black olives, basil and corn on the tortilla.

4) Sprinkle salt and crushed black peppercorns on it. Grate cheese on top, keep the tray in the preheated oven and bake for 10 minutes. Make more pizzas similarly.

5) Cut into wedges, sprinkle red chilli flakes and serve hot.
